Everything but the Kitchen Sink Chili

We wanted to make a meal the other day, but didn't feel like going to the grocery store.  Luckily, we had hamburger meat, Sherry left over from another recipe, and a few veggies hanging around.  So we literally threw this together and thought it was delicious!


1.5 pounds of lean hamburger ground sirloin or ground turkey

1 tablespoon of oil (grape-seed, olive or canola)

2-3 small shallots

2-3 garlic cloves

3/4 cup of Sherry

1 cup of chicken broth

1 cup of beef broth

1 (14.5 ounce) can of fire roasted diced tomatoes

1 (4 ounce) can of green chilies

1 small can (6 ounce) of tomato paste

1 bell pepper

cayenne pepper

1 tablespoon of cumin

2 tablespoons of chili powder

1/2 teaspoon of red pepper

1/2 tablespoon of paprika

salt to taste


cheese & crushed chips for garnish


In a pan heat the oil on medium and sauté onions and garlic until tender. Now, add your lean meat stirring frequently. Then, add all other ingredients.

Red Pepper Soup with Yogurt Cream Sauce


We love peppers.  Here is one we created for comfort and it's low-fat benefits.  We thought is was super yummy!


2 tablespoons canola or olive oil

1 small chopped onion

3 chopped garlic cloves

1/2 teaspoon paprika

15 ounce can of crushed tomatoes, puree in blender

12 ounce jar of roasted red peppers or you can roast them yourself and puree

1 1/2 cup of chicken broth

1 tablespoon balsamic vinegar

2 teaspoons of raw sugar

1 1/2 teaspoon salt

1/2 teaspoon of pepper

2 teaspoons of sherry (optional)

1/2 cup low-fat greek yogurt

3/4 cup fresh or dried basil


Soup:  Heat a soup pot and sauté oil, onion, and garlic.   Add paprika, tomatoes, peppers, and chicken broth.  Next, add balsamic vinegar, sherry, sugar, and 1/2 cup of basil.  


Basil Cream:  Add yogurt, 1/4 cup of basil, salt, & pepper.  Serve soup with a spoonful of basil cream on the top.
